Revisiting HACCP in Light of Food Safety Modernization Act

The newly passed FDA Modernization Act will result in increased expectations for HACCP plans, for the scientific basis and rigor of the hazard analysis as well as the Critical Control Points (CCP’s) correctly chosen, based on sound science. At the same time, HACCP is not about satisfying a Regulator or an auditor but about your plant knowing the risks within your manufacturing process, then managing them carefully. It is vital to do a thorough risk assessment, and based on that, find the right CCP’s. The logic in following the questions of the CCP Decision Tree is generally not well understood but will be explained simply, using many relevant food plant examples across many food categories.

  • Be able to derive Prerequisite Programs that are complete to address the hazards not managed by CCP’s or OPRP’s

He is a resource for many clients with in-plant facilitation of HACCP & GMP programs (SQF, ISO22000) and is an ISO22000 Lead Assessor. Irwin was a contributor to the Quality Auditor’s HACCP Handbook (ASQ). When it comes to management systems, he is a firm believer in the integration of risk management systems as well as using a behaviour-based approach. He was the winner of the OFPA’s Sanitarian of the Year award in 2005. Prior to consulting he worked with both Pillsbury Canada and Maple Leaf.
